Little Lamb
Chargrilled Lamb tails
Ingredients
Yield: 4 servings
4 parsnips
12 cardamom pods
1 T + 1 ts coriander seeds.
3 T olive oil
4 cloves garlic, crushed
8 strips of orange peel
4 lamb tails about 150g. EA
3 bird's eye peppers, dried
1 bunch spinach, washed and trimmed
150 g plum tomatoes
16 mushrooms
16 cherry tomatoes
4 T extra virgin olive oil
2 T mint, finely chopped
2 T cilantro, finely chopped
1 dash balsamic vinegar
Salt 1
1 pepper
1 frying oil
1 sprig rosemary
Preparation
Peel the parsnips, trim and shave in long strips. Fry in hot oil in a frying pan til golden brown. Drain briefly on paper, sprinkle with salt, store airtight after it has cooled. (Held can be up to 2 days) Split the cardamom pods and extract the seeds.
Put half of them in a bowl with 1 teaspoon coriander seeds, olive oil, garlic and
orange zest and mix together to make a marinade. Add the lamb tails, contact layer in the marinade, then season to taste. Cover and leave a room temperature for 1 hour.
Grind the cardamom pods with the rest of the 1 TB coriander seeds and set aside for the tomato gravy. Mix the dried peppers and rosemary with 2 TB olive oil. Reserved for the mushrooms.
Dive the spinach in boiling water. Count to 30 and remove and drain with cold water.
Drain again.
Next prepare the ingredients for the sauce. Peel the tomatoes, cut in half flick the seeds into a sieve over a bowl and then drain, dice the flesh.
Cool the tails marinated lamb on a very hot grill cooked to your liking. Place the lamb on a baord sprinle both sides and very generous with the salt. Let stand 2-3 minutes. while preparing the garnishes.
Put the pepper oil for the mushrooms in a small frying pan and put a med. high heat. When hot add mushrooms. Cool quicly until lightly browned. Sprinle with salt then tip onto a plate.
While mushrooms are cooking, heat a large oiled pan over a med. heat. Add the spinach, sprinkle a little salt and add some ground pepper. Gently warming, not frying. Arrange on 4 plates.
Wipe out both frypans. Put 1 teaspoon oil in small skillet and place it on a med. high heat. As a tip of the cherry tomatoes. Stir quickly and cook 20 seconds. until they glassy. Place on a plate.
Heat the extra virgin olive oil in a frying pan. Add the ground spices, then the diced tomato gravy and tense, adding a good dash of balsamic vinegar, 1 / 4 ts of salt and spices. Then warm by turning off the heat. Cut the meat across the grain into thin slices and transfer to the plates.
Spoon the tomato sauce and garnish with tomatoes, mushrooms and parsnips. Serve immediately.
