Spring Barbie
Keep dyes, preservatives and sugars in the Bay – a good recipe to show you the way
Have you ever looked at the ingredients in ready-made frosting? Many of the ingredients found in the beautiful color dyes, artificial ingredients and preservatives formulating improve the taste. Oh – and let's not forget lots of sugar. Ah – a dream food for people with a sweet tooth and children who go bonkers from the sugar high. Even many homemade recipes – the average amount of sugar for a glaze recipe can range anywhere from one to two cups. For those who do not have time to bake cakes from scratch, there are some big box options preservative free, low sugar cakes. Frosting on the other hand, presents a bit of a challenge.
There is an ongoing debate for decades about the use of dyes to enhance foods, and a hit in many of these arguments is red dye. Despite the controversy, red dyes are still seen in the ingredient list of the many boxes and canned frosting. Especially in decorative glaze are pink and purple. Red Dye Number 2 is a tar based product known to cause constriction of the bronchi, angioedema (swelling) and hives.
As we all increasingly aware of the harmful effects of dyes, preservatives and high sugar, many families are trying to find healthier desserts. On a quest to explore what in our stores was a "healthy frosting" I was disappointed to find just one. The glaze was made by Cherry Brook Kitchen and had no preservatives, artificial colors or dyes. But I was on a quest to find or create the perfect pink icing for my four little girls. My common frosting search even more complicated, because the red dye is used to make pink. Of course, the icing pink, pink, pink. So what is a demanding boss with four customers to do her feet? I did what any chef cook would do in the most stressful situations – experiment. So the five of us suspend our princess, our thinking caps and rhinestone crowns. After many experiments in the kitchen, we found a fast, easy way to make pink frosting without preservatives or dyes. Here is our super healthy semi-homemade recipe for Spring Tulip Cupcakes! A delicious recipe for a spring birthday party or a "girls day".
The recipe from start to finish takes approximately 30 minutes. Unless your little four assistants who never stop talking, get side tracked using spatulas as microphones and loses the cupcake wrappers because they are new Barbie's hat!
INGREDIENTS
Cake Mix
Cheerybrook Kitchen Yellow Cake Mix. My favorite boxed cake mix, because it's nut free, dairy free, preservative free, gluten free, and very easy to make.
Tulip & Tulip Toppers Cupcake Tower (craft shops, thesugardiva.com, kitchencrafts.com)
Pink Glaze
A package of Philadelphia cream cheese
Organic Frozen Cherries
Powdered sugar
Horizon Organic Milk
Mix one 8 oz package of Philadelphia Cream Cheese, a tablespoon of powdered sugar and a tablespoon of organic milk. Mix on medium setting creamy. Heat ½ cup of organic frozen cherries in the microwave or on stove the liquid. Heat at a very low setting. Pour ½ tablespoon of cherry juice into cream cheese base and start again mixing on medium speed. This is a bit experimental, because you probably If you need a darker pink color, so start with no more than ½ tbsp. You can also add another tablespoon of sugar if you prefer a sweeter frosting. Most recipes require that two cups of sugar, so this figure is relatively low. The glaze picks up the natural sweetness of the sour cherries with a mild kick and compliments the natural sweetness of the cake.
Once cool, frost the cupcakes and top each with a tulip and stack on top the tower .. Voila – it looks just like something Martha would do! Check out leisanaples.com for more healthy recipes your family will enjoy.
